Millionaire Bars

Mock Shortbread Ingredients:

  • 1/2 cup coconut/almond flour blend + 1/2 cup vegan Vanilla Shakeology

  • OR 1 cup coconut/almond flour blend

  • 1/4 cup pure maple syrup

  • 1/2 cup melted coconut oil

  • 1 tsp vanilla extract

Gooey, Nutty Filling Ingredients:

  • 1/4 cup pure maple syrup

  • 1/4 cup melted coconut oil

  • 1/4 cup crunchy almond butter

  • 1 tsp vanilla extract

  • pinch of sea salt

Chocolate Topping Ingredients:

  • 1/2 cup coconut oil

  • 1/2 cup cocoa powder

  • 2-3 tbs pure maple syrup

  • 1 tsp anilla extract

  • pinch of sea salt

Instructions:

  1. Mix the mock shortbread ingredients in a bowl.  Press into a baking dish linked with parchment (for easy removal and cleanup!) Press the "dough" to mock a pie crust if using a pie pan, and press it flat if using a brownie pan.  

  2. In a pot, over medium/low heat, melt flying ingredients, stirring continuously to avoid lumping and burning.  Remove from heat and allow cooling for several minutes before layering over the "crust."  Refrigerate or freeze while moving on to the next step.  

  3. In a clean pot, melt coconut oil over medium/low heat for chocolate topping.  Add maple syrup, cocoa powder, vanilla and sea salt, stirring until smoothly combined.  Remove from heat and cool. 

  4. After chocolate has cooled enough, pour it over the firming crust/filling- spread to cover.  Refrigerate for approximately 30 minutes before serving.  

Note...if you serve it too soon, the filling will be gooey and amazingly decadent!  There are no rules once you get through the process... ENJOY!
