Sweet Potato Hash
When referring to food, a "hash" is any "course mixture of ingredients." This mixture of ingredients brings warmth to a winter day and simple nutrition to any meal.
1 - 2 medium sweet potatoes
-I like to use leftover sweet potatoes, but if you need a meal on the fly...go at it like this: (poke some holes in them with a fork and toss them in the microwave for 3-4 minutes until semi-fork tender)
2-3 cups of rough chopped kale
Add this to a skillet in 1-2 tbs coconut oil over medium heat. Chop the sweet potatoes (skin on or off, your preference), and add to kale in skillet.
Cook, tossing to keep pieces from sticking to the bottom or getting overly browned.
Sprinkle hot red pepper flakes and sea salt.
Remove the veggies from the pan and place aside.
Fry 2 organic, free-range eggs to your preference
Slice 1/2 an avocado.
Plate about 1 cup of veggie mixture and top with egg and avocado.
