Light & Easy Tuna Cakes

Ingredients:

  • 2 cans solid white albacore tuna

  • 2 tbs chopped cilantro

  • 2 tbs lemon juice

  • 1 egg

  • 1/4 cup hemp seeds (alternative

  •  for breadcrumbs)

  • 3 tbs chopped green onion

  • 1/2 tsp sea salt 

  • 1/2 tsp black pepper

  • 1 tsp garlic powder

  • 1 tbs coconut oil

Instructions:

Drain canned tuna.  Combine all ingredients in a medium bowl, using a fork.   Using hands, form patties from the mixture - it will be wet.  

Add coconut oil to pan; add cakes when oil has melted.  Cook 2-3 minutes on each side, until browned and cooked through.

For Sriracha Aioli:

Combine 1/4 cup Greek Yogurt, 3 tbs mayonnaise,

1 tbs lemon juice, 1 tbs siracha.  Adjust ingredients according to taste preference and serve approx 1 tbs per cake!
