Fajita Lettuce Wraps
4 Chicken breasts OR 1 medium Flank Steak
2 Tbsp Coconut oil (melted)
1 tsp chili powder
1/2 tsp sea salt
1 tsp ground cumin
1/2 tsp garlic powder
1 medium red/green bell pepper- thinly sliced
1 medium onion- thinly sliced
1 Tbsp fresh lime juice
8 large Romaine or Butter Lettuce leaves
1/2 medium avocado sliced or chopped
1 cup fresh pico de gallo or salsa
1/4 cup shredded cheese- optional
Makes 4 servings (2 wraps per serving) (directions for grilling; can be done in a sautee pan stovetop as alternate) 1- Preheat Grill to medium heat. 2- Prepare meat by drizzling with 1 Tbsp coconut oil. In a small dish, combine spices and salt. Sprinkle/rub half of spice mix onto meat. 3- Use the remaining oil and spices to coat the peppers and onions and spread onto a later of aluminum foil. 4- place foil and meat onto the grill, allow to cook top down for approx 4 mins per side. Vegetables may take longer to cook...they can be added to grill prior to meat to allow time for cooking. 5- When vegetables and meat achieve the grill charring appearance, remove from heat and sqeeze fresh lime juice over both portions. Allow meat to rest approx 5 minutes and slice into thin strips. 6- Evenly top Lettuce leaves with meat, Vegetables, Avocado, and salsa. 7- sprinkle with cheese if desired
