Pumpkin Cheesecake Balls

Ingredients for cheesecake:

  • 8 oz cream cheese

  • 1/2 cup pumpkin puree

  • 7-10 drops of Stevia to taste (or 1 tbsp coconut palm sugar)

  • 1 tsp pumpkin pie spice

  • 2 tbps coconut flour

  • Optional coating:

  • 1/3 cups nuts finely minced or blended

  • 2 tbsp coconut palm sugar

  • 1 tsp cinnamon

Instructions:

  1. Line a baking sheet with parchment paper

  2. mix cheese cake ingredients together using stand or handheld whisk

  3. Place mixture in freezer for 30+ minutes until firm enough to form balls with cook scoop/spoon

  4. In a separate bowl combine the  coating ingredients and set aside

  5. Scoop balls of cheesecake mixture and roll in the coating until covered

  6. Place on baking sheet and re-freeze for a 20 minutes or more until firm, then serve. 

  7. Store these in the fridge in a covered container (may need to refreeze to set up again).
