Vegan Cauliflower Stew

Ingredients:

  • 2 tablespoons coconut oil

  • 1 tablespoon cumin

  • 1 medium onion, finely chopped

  • 1/2 can of organic fire roasted tomatoes

  • 1 medium head cauliflower, stemmed and cut into bite-size florets

  • 1 cup chopped kale

  • 2 teaspoons ginger powder

  • 1 tablespoon coriander powder

  • 1 teaspoon turmeric powder

  • 1 can full-fat, unsweetened coconut milk

  • 1 container of organic vegetable broth

  • 1 teaspoon sea salt

Instructions:

  1. In a deep cast iron skillet or soup pot, heat the coconut oil for 30 seconds on medium heat.

  2. Add the cumin and onions and cook for another minute, stir in tomatoes

  3. Add everything else and stir.  Let the soup simmer, covered for 20 + minutes, adding sea salt and pepper to taste.

  4. Serve with chopped herbs, red pepper flakes and a squeeze of lime juice!

For Serving : 

Sea Salt & Pepper to taste

2 tablespoons chopped cilantro

Fresh squeeze of lime juice 

Hot red pepper flakes, option
